Portuguese Custard Tarts

Ingredients
1 whole egg (large)
2 eggs yolks (large)
120g Golden Caster Sugar
2 tbsp Cornflour
400ml Full-fat Milk
2 tsp Vanilla Extract
1 pkt ready rolled Puff Pastry
Method
Lightly oil a 12 hole muffin tin and pre-heat the oven to 200C/180C Fan/Gas 6.
Place egg, yolks, cornflour & sugar in a pan and mix well.
Gradually add the milk and whisk until smooth.
Place the pan on the heat and stir until thickened - add the vanilla extract. Cover with greaseproof paper to prevent skin forming.
Cut pastry into 2 pieces and place one on top of the other.
Roll the pastry from the shorter side into a log shape and divide into 12 even pieces.
Roll each piece into a circle to fit the muffin tins.
Spoon in the custard mixture and bake for around 25 mins until browning on top.
Place on a cooling rack and stand back to admire.
