Portuguese Custard Tarts

Ingredients

  • 1 whole egg (large)
  • 2 eggs yolks (large)
  • 120g Golden Caster Sugar
  • 2 tbsp Cornflour
  • 400ml Full-fat Milk
  • 2 tsp Vanilla Extract
  • 1 pkt ready rolled Puff Pastry

Method


  1. Lightly oil a 12 hole muffin tin and pre-heat the oven to 200C/180C Fan/Gas 6.
  2. Place egg, yolks, cornflour & sugar in a pan and mix well.
  3. Gradually add the milk and whisk until smooth.
  4. Place the pan on the heat and stir until thickened - add the vanilla extract. Cover with greaseproof paper to prevent skin forming.
  5. Cut pastry into 2 pieces and place one on top of the other.
  6. Roll the pastry from the shorter side into a log shape and divide into 12 even pieces.
  7. Roll each piece into a circle to fit the muffin tins.
  8. Spoon in the custard mixture and bake for around 25 mins until browning on top.
  9. Place on a cooling rack and stand back to admire.
