Any Berry Clafoutis

Makes eight Clafoutis
Ingredients
140g Golden Caster Sugar
100gm Ground Almonds
25gm Plain Flour
Good pinch of Salt
3 Large Eggs
4 Large Egg Yolks
375ml Double Cream
375gm Berries of your choice.
A little butter to brush the dishes.
Sifted Icing Sugar to dust.
Method
Mix ground almonds, flour and salt. Tip into a blender.
Add sugar, whole eggs, egg yolks and cream. Blend until smooth.
Preheat oven to 200C/Fan 180C/Gas 6.
Butter eight 10cm gratin dishes. Scatter the berries in the bottom.
Pour the batter equally into the dishes.
Bake for about 18-20 minutes until risen and firm.
Dust with Icing Sugar and serve warm.
Perhaps a little extra whipped cream and honey to decorate?
