Mixed Berry Clafoutis

Any Berry Clafoutis

Ingredients


  • 140g Golden Caster Sugar
  • 100gm Ground Almonds
  • 25gm Plain Flour
  • Good pinch of Salt
  • 3 Large Eggs
  • 4 Large Egg Yolks
  • 375ml Double Cream
  • 375gm Berries of your choice.
  • A little butter to brush the dishes.
  • Sifted Icing Sugar to dust.


Method


  1. Mix ground almonds, flour and salt. Tip into a blender.
  2. Add sugar, whole eggs, egg yolks and cream. Blend until smooth.
  3. Preheat oven to 200C/Fan 180C/Gas 6.
  4. Butter eight 10cm gratin dishes. Scatter the berries in the bottom.
  5. Pour the batter equally into the dishes.
  6. Bake for about 18-20 minutes until risen and firm.
  7. Dust with Icing Sugar and serve warm.
  8. Perhaps a little extra whipped cream and honey to decorate?
