Guinness Stew

James' Steak and Guinness Casserole

Ingredients

  • Onions, 2 large sliced.
  • A few sprigs Thyme (or dried equiv.)
  • 1 clove Garlic (at least).
  • 2 Carrots, chopped
  • 500ml Guinness
  • 750gm Braising Steak, cubed
  • 4 Tbsp plain flour, well seasoned.
  • Beef Stock. (The Dark Beef Knorr are good)

Method


  1. Cook onions, thyme and garlic in a little oil in a flameproof casserole until onions are soft and caramelising.
  2. Dust the beef with the seasoned flour and brown in a separate pan with a little more oil.
  3. Add the beef to the casserole dish with the onions and the chopped carrots.
  4. Pour in the Guinness and enough beef stock to just cover.
  5. Cover and simmer over very low heat for 2-3 hours.
  6. Alternatively, oven cook at 150C/fan 130C/Gas 3 for 2-3 hours.
  7. Check after 2 hours and add a little more beef stock if necessary.
  8. Serve with buttery mash and perhaps a glass of Guinness.
