Italian Baked Lamb and Potatoes

Italian Baked Lamb and Potato

With two different cheeses!


  • 3 potatoes, thinly sliced
  • 4 Lamb leg steaks
  • 3 garlic cloves
  • ½ cup Parmesan cheese
  • ½ cup Pecorino cheese
  • 3 large tomatoes
  • Lots of Extra Virgin Olive oil
  • Salt and Pepper

Method


  1. Preheat oven to 200°C
  2. Place some olive oil in the bottom of deep dish.
  3. Arrange some of the potato slices in one layer.
  4. Scatter over some of each cheese and tomato and garlic pieces
  5. Arrange a couple of the lamb chops on top.
  6. Season with salt and pepper.
  7. Repeat potato and chops layers.
  8. Finish with more tomato, garlic and cheese.
  9. Add ¼ cup of water (or white wine).
  10. Drizzle over a generous amount of olive oil. (Lots, go for it.)
  11. Cover with lid or foil and bake for 1hr 15 min.
  12. Uncover and bake a further 30 minutes.
