Avgolemono Soup

Classic Greeek Recipe
Ingredients
2 Skinless Chicken breasts
2 Litres Chicken Stock
125gm long grain rice
Juice of 2 - 3 lemons to taste.
3 large egs
Method
Place the chicken and stock in a saucepan, cover and cook gently for 20 minutes to poach the chicken.
Remove the chicken and shred using two forks. Keep it to one side until needed.
Add the rice and lemon juice (taste, you may not want it all).
Cook for 15 minutes until the rice is cooked through.
Beat the eggs in a bowl, gently add 3 ladles of stock from the saucepan, whisking gently all the time.
Be very careful not to let the soup boil at this stage or you will have lemon omelette.
Remove the saucepan from the heat and add the beaten egg mixture, stirring constantly to thicken the soup.
Add the poached chicken, reheat gently, add to serving bowls. Garnish with lemon slice and parsley/fennel tops.
