Slow Cooker Beef and Barley Soup
Fantastic on a Winter's day!
Ingredients
700g Braising steak, cut into 5cm pieces.
Salt and black pepper.
3 Cloves of Garlic.
1 Onion, diced.
2 Carrots, peeled and chopped.
2 Tsp fresh thyme leaves.
200g Mushrooms, halved.
50g Pearl Barley.
1 Ltr Chicken Stock. Yes, Chicken!
1 Tbsp Soy Sauce.
Method
Pat the beef dry with paper towels and season with salt and pepper.
In a large pan, really brown the meat until caramelised.
Move the meat into the slow cooker.
In same pan, add garlic, onion, carrots and thyme, season with salt and pepper.
Cook until softened slightly and then deglaze with a splash of water.
Add mixture to meat in slow cooker.
Add mushrooms, barley, stock and soy sauce.
Cook for 8 hours until meat really tender and serve.
