Courgette and Cheddar Soup
Hundreds of Courgettes? Try this!
Ingredients
500g Potatoes, peeled and chopped.
2 vegetable stock cubes or similar
1 Kilo Courgettes, chopped.
Bunch of Spring Onions including the green. Save one for garnishing.
100gm Extra Mature Cheddar, grated.
Little more Cheddar to sprinkle on top.
Good grating of Nutmeg.
Method
Put the potatoes in a large pan with just enough water to cover.
Crumble in the stock cubes and bring to the boil. Cook for 5 minutes
Add the courgettes and cook for another 5 minutes.
Throw in the Spring Onions and cook for a final 5 minutes.
Remove from heat. Stir in the cheese. Season with nutmeg, salt and pepper.
Whizz the soup, adding a little more water (or milk) to required consistency.
Scatter cheese, reserved spring onion and a little grated nutmeg on top and serve.
