Courgette and cheese soup

Courgette and Cheddar Soup

Ingredients

  • 500g Potatoes, peeled and chopped.
  • 2 vegetable stock cubes or similar
  • 1 Kilo Courgettes, chopped.
  • Bunch of Spring Onions including the green. Save one for garnishing.
  • 100gm Extra Mature Cheddar, grated.
  • Little more Cheddar to sprinkle on top.
  • Good grating of Nutmeg.

Method

  1. Put the potatoes in a large pan with just enough water to cover.
  2. Crumble in the stock cubes and bring to the boil. Cook for 5 minutes
  3. Add the courgettes and cook for another 5 minutes.
  4. Throw in the Spring Onions and cook for a final 5 minutes.
  5. Remove from heat. Stir in the cheese. Season with nutmeg, salt and pepper.
  6. Whizz the soup, adding a little more water (or milk) to required consistency.
  7. Scatter cheese, reserved spring onion and a little grated nutmeg on top and serve.
