White Beans and Tahini
by Frank, any White Bean, serves two.
Tahini give a nutty creamy taste.
Ingredients
2 Tbsp Olive Oil
100g Onion, finely chopped
2 Cloves Garlic, chopped, if liked.
2 Tsp Dried Oregano
2 Tsp Cumin Seeds
3 Tbsp Light Tahini
400g tin white beans, butter beans or Haricot. drained
50g Fresh Parsley, finely chopped
Freshly ground black pepper
Extra Virgin Olive Oil to drizzle
2 large slices sourdough bread, toasted, to serve
Method
Heat the olive oil in a pan, add the onions and cook until soft
Add the garlic and spices, cook for 1 or 2 min to infuse oil
Stir in the Tahini and 50ml hot water
Add the beans and parsley, cook through to heat the beans
Finish with Black Pepper and a drizzle of olive oil
Serve with toasted Sourdough bread
