Chickpea Salad

Canned Chickpeas perfect for this.


  • Ingredients

  • ½ red onion, finely diced
  • 2 cloves garlic, minced, if liked.
  • 3 Tbsp Lemon Juice
  • 2 x 14oz tins chickpeas, drained and rinsed.
  • ½ large cucumber, diced
  • 1 red pepper, deseeded and diced
  • 100g pitted black olives, halved
  • 150g Cherry tomatoes, halved
  • 2 Tbs Pumpkin seeds or similar
  • Small bunch fresh parsley, chopped, leaves and stems
  • 3 Tbs Olive Oil
  • Salt and Pepper to taste

Method


  1. In a small bowl add the onion and garlic.
  2. Mix in the lemon juice and season with salt and pepper.
  3. Once the chickpeas have been drained and rinsed add them to the bowl.
  4. Add the cucumber, red pepper, olives, cherry tomatoes, seeds and parsley.
  5. Mix well, scooping some of the dressing to the top and serve.
