Roasted Peppers, Olives and Goat's Cheese.

Serve with salad of choice.
Ingredients
½ Red and Green pepper per person (pp).
6 small cherry tomatoes (pp).
2 cloves garlic.
3Tbs Olive Oil.
12 Kalamata Olives, halved and pitted.
150g Soft Goat's cheese.
Handfull Basil to serve.
Salad of choice.
Crusty bread.
Method
Heat the oven to 190C/Fan 170C/Gas 5.
Put the peppers in a roasting tray.
Toss together tomatoes, garlic and Olive Oil.
Season, then fill the peppers.
Roast for 30-40 min, until peppers really soft.
Dot with the cheese, and scatter with Oil and Basil.
Serve with bread and salad of choice.
