Roasted Peppers Traybake

Roasted Peppers, Olives and Goat's Cheese.

Serve with salad of choice.


  • Ingredients

    • ½ Red and Green pepper per person (pp).
    • 6 small cherry tomatoes (pp).
    • 2 cloves garlic.
    • 3Tbs Olive Oil.
    • 12 Kalamata Olives, halved and pitted.
    • 150g Soft Goat's cheese.
    • Handfull Basil to serve.
    • Salad of choice.
    • Crusty bread.

    Method


    • Heat the oven to 190C/Fan 170C/Gas 5.
    • Put the peppers in a roasting tray.
    • Toss together tomatoes, garlic and Olive Oil.
    • Season, then fill the peppers.
    • Roast for 30-40 min, until peppers really soft.
    • Dot with the cheese, and scatter with Oil and Basil.
    • Serve with bread and salad of choice.
