Tuscan Beans

Just a couple of minutes!
Ingredients
2 Tbsp Olive Oil, plus 2 for drizzling
1 Red Onion, roughly chopped
1 Garlic Clove, crushed
227g Can Chopped Tomatoes
400g Can Harricot Beans, rinsed
1 sprig fresh Rosemary
2 x 75g or 4 x 40g slices Sourdough Bread
1 Clove Garlic for toasted bread
salt and freshly ground black pepper
Method
Heat the oil in frying pan over medium heat.
Add the red onion and garlic and fry 5 min, until soft
Add the tomatoes, beans and rosemary
Season with plenty of pepper and a small pinch salt
Heat through for 5 minutes, stirring occasionally
Toast the sourdough on both sides.
Drizzle a teaspoon of olive oil over each piece and rub toast with garlic
Serve the beans on the sourdough
