Tomato Galette

Tuscan Beans

Just a couple of minutes!


  • Ingredients

  • 2 Tbsp Olive Oil, plus 2 for drizzling
  • 1 Red Onion, roughly chopped
  • 1 Garlic Clove, crushed
  • 227g Can Chopped Tomatoes
  • 400g Can Harricot Beans, rinsed
  • 1 sprig fresh Rosemary
  • 2 x 75g or 4 x 40g slices Sourdough Bread
  • 1 Clove Garlic for toasted bread
  • salt and freshly ground black pepper

Method


  1. Heat the oil in frying pan over medium heat.
  2. Add the red onion and garlic and fry 5 min, until soft
  3. Add the tomatoes, beans and rosemary
  4. Season with plenty of pepper and a small pinch salt
  5. Heat through for 5 minutes, stirring occasionally
  6. Toast the sourdough on both sides.
  7. Drizzle a teaspoon of olive oil over each piece and rub toast with garlic
  8. Serve the beans on the sourdough
